Tasty Daycare Breakfast Burrito
Another most common daycare breakfast menu to make is burrito. This kind of menu is not only tasty but also makes children get difficult to deny it. In fact, breakfast is very important as food for the brain. Children who do not get any breakfast in the morning will tend to get difficulties in catching learning lesson. Of course you will need to differentiate between your homemade burrito with the common available at restaurant. Be sure to make it healthy and tasty. Let us move into the ingredient list:
- 4 teaspoons canola oil, divided
- 1/3 cup uncooked long-grain white rice
- 1/4 teaspoon salt, divided
- 1 tablespoon chopped jalapeño pepper
- 1/4 cup reduced-fat sour cream
- 1 teaspoon chopped garlic, divided
- 2/3 cup water
- 1 tablespoon chopped cilantro
- 1 teaspoon fresh lemon juice
- 1/8 teaspoon ground red pepper
- 1/2 cup fresh corn kernels
- 1 small zucchini, halved lengthwise and sliced (about 3/4 cup)
- 1 cup chopped onion
- 1 cup sliced mushrooms
- 3/4 cup halved grape tomatoes
- 4 (7- to 8-inch) whole-wheat tortillas
- 4 ounces quesadilla cheese, shredded (about 1 cup packed)

Next is the time to the making process:
First of all, get the small sauce pan and heat it on over medium high heat. After that, take 1 teaspoon of canola oil and pour it to the pan. Swirl it to coat and then add the rice and garlic. Saute this ingredient for about 1 minute. Remember to stir it in a constant movement.
Add 1/8 teaspoon of salt and 2/3 cup water and let it boil. Cover it up and reduce the heat. Simmer it for about 15 minutes. Remove the pan from heat and let it stand for 10 minutes before fluff it with a fork and stir in jalapeno pepper.
Take a small bowl and put in chopped cilantro, juice, sour cream and red pepper.
Prepare large nonstick skillet in over medium high heat level. Do not forget to add the remaining of 1 table spoon of oil to the pan and swirl it to coat.
Put the onion and saute it for about 2 minutes. Keep stirring it frequently before adding the rest of garlic and mushrooms. Saute this mixture for about 1 minute and keep stir it frequently.
Put in the zucchini and corn. Saute this ingredient for about 2 minutes while keep stirring it. Add the 1/8 teaspoon of salt and tomatoes. Keep saute it for about 30 minutes until the tomatoes get heated completely. After that, remove the mixture of vegetable from the pan and wipe it cleanly with paper towel.
Prepare for the next making process by heating the tortillas. Do not forget to divide the sour cream mixture among tortilla. Spread the sour cream into a thin layer but keep to leave ½ inch as borders for each tortilla.
Take ¼ cup of cheese and use it as the top of each tortilla. You may also add the rice mixture and vegetable mixture. Just give ¼ of each mixture and then roll the tortilla.
Prepare the skillet into medium heat. Take 2 burrito to the pan and seam it side down. Cook the burrito for about 1 minute until each of the burrito side get browned. If you like, you can get cilantro leaves as burrito garnish.
